I recently read that Pope Pius X is sometimes known as Pope of the Eucharist, because he extended permission to receive the Eucharist to children as young as 7 in the Latin church. What was the age before that?

It was generally at the age of Confirmation: both at the same ceremony around the age of 12 or 13.

My parents are both in their 90’s now and they made their communion at the age of 14 respectively.

Confirmation and First Communion were generally celebrated together at about age 12-14, the age when most children ended their formal education and went to work.
