(Some practical advice: As someone who has had some dealings in the past with prisons and the incarcerated, I think the best way to begin would be as a volunteer to help an established prison chaplain. You might want to check in the diocese containing the prison to see if there is a Catholic chaplain and if there is a volunteer program. I would really advise against just going and trying to contact people in prison without getting some training and pointers from people already involved in this ministry, in order to avoid getting in any trouble or even worse putting yourself at risk. There is also an organization called Prison Fellowship that trains people for prison ministry, but I don’t think it’s specifically Catholic. Good luck. )
