Can we offer our prayers simply for Our Lady’s intentions, though we may not know what exactly they are? Thank you

In a word? Yes, of course.

You can do this for a friend, or when asking for someone to pray for you as well. Even if you do not know the prayer intention, God does.

You can even offer the prayers of others as your own prayers. Saint John Vianney told a story of a man who became very holy from this:
“‘I did nothing * but say, Those who pray so devoutly are saints: I am their beast of burden: O Lord! I have the intention of doing what they do: I say to Thee whatever they say.’ These were afterwards his ordinary words, and he arrived by means of this at a sublime degree of prayer.”*

Yes. I do this on the first Our Father bead on the Rosary, I offer that for Our Lady’s intentions.

Yes, that is part of the Total Consecration to Jesus through Mary by St. Louis de Montfort.
