CCC 582 Going even further, Jesus perfects the dietary law, so important in Jewish daily life, by revealing its pedagogical meaning through a divine interpretation: “Whatever goes into a man from outside cannot defile him. . . The RSV. Perhaps you have the answer. Except, I thought it was the job of the jewish laity to kill, skin, butcher their sacrifice … and give to the priests to roast or boil meat in pot.

Sounds like Christ is speaking of priesthood doing non-authorized things [probably work] … and yet being excused of sin, due to their priestly position.

The priest was in charge of killing the animal and everything after that, if I understand it correctly.

It almost makes me wonder if they were priests or butchers!
