I know using Project Gutenberg isn’t illegal but is it immoral to download and print sheet music from here in place of buying the sheet music?
 
Project Gutenberg is very careful about copyright. If it’s in PG I would be comfortable using it.
 
The thing about PG is that it usually digitizes works whose authors died more than 50 years ago. (or so)
They do not just randomly decide to put sheet music online. And they only put material that they can legally make available.

As far as I know, all classical music such as Beethoven are in the public domain so there are no issues with copyright infringement.
