Fact: we are to always forgive others just as God forgives us! If I sin against you and ask you for forgiveness, without actually addressing you, how can I possibly know if you have forgiven me? Should I just assume?

I do agree with you; only God can forgive sins; only GOD can pronounce forgiveness for the actual sin itself, and yes, that’s why Christ died and that’s why we follow HIM. We are justified in GODS eyes by the blood of Christ. However, Jesus still said to His hand picked sinful, fallible Apostles:
“Peace be with you. As the Father has sent me, so I send you.” And when he had said this, he breathed on them and said to them, “Receive the holy Spirit. Whose sins you forgive are forgiven them, and whose sins you retain are retained.” John 20
God chose to pronounce the forgiveness of sins THROUGH His chosen ministers, in His stead, as per holy scripture! If the sinful, fallible Apostles were told to forgive/retain sins, IN THE NAME OF JESUS CHRIST, why is it such a stretch to believe that their sinful, fallible successors were to do the same, IN THE NAME OF JESUS CHRIST? Did this spiritual gift end with the Apostles? If so, what was the point? Certainly you don’t believe that mere sinful, fallible men have any power to forgive/retain sins? It is Christ, and only Jesus Christ, Who has all the power!!! The priest or bishop is merely the instrument through which Christ works. Even if that minister is a wolf in sheep’s clothing, do you really think that that wolf can prevent Jesus from working through him?
Jesus established a church and the church is His Mystical Body to which He is the Head and Savior, as per the holy bible! To be saved by the atoning blood of Christ, is to belong to His church.
When we offend God…sin against Jesus, we sin against His established church, His mystical Body (where the precious Eucharist can be found) - to which He is the head and Savior. We separate ourselves from His established spiritual family, the church, here on earth. To get back in His good graces, and back into His family, the church, we simply ask Him for forgiveness via His chosen “ministers of reconciliation.” People inherently need to hear the words: I forgive you, before they have closure; perhaps this is why Jesus gave us the sacrament of reconciliation!
In John 20, who is “them?” Is it the entire church (established by Jesus circa AD 33) - both teacher and pupil?
Is it both the Apostles, (hand picked by Jesus) - and their fellow Jews, who were not hand picked by Jesus?
Who was Jesus addressing?
Did Jesus breath on just His chosen Apostles (His fledgling Apostolic church leaders) - and tell them: *“Receive the holy Spirit. Whose sins you forgive are forgiven them, and whose sins you retain are retained.” * - or did He breath on all of the Jews in Jerusalem, and tell all of them: *“Receive the holy Spirit. Whose sins you forgive are forgiven them, and whose sins you retain are retained?” *
Jesus said: “But you will receive power when the holy Spirit comes upon you, and you will be my witnesses in Jerusalem, throughout Judea and Samaria, and to the ends of the earth.”
