Question about Orthodox Green Monday

Can anybody tell me how/why the Greek Orthodox start their Lent on a Monday?

I believe the Catholics start with a Wednesday (Ash Wednesday) because they count 40 day until Easter, minus the Sundays. How do the Orthodox figure it to be two days longer?

Not only the Orthodox, but Eastern Catholics as well.
 
Lent for us is also 40 days, however we A) Count the Sundays, and B) Don’t count Holy Week as part of the Lenten Fast (although it is still a fast).
