I was wonder what age do you be a Catholic youth until? Is it 12 to 35? I think I remember reading that somewhere it’s 12 to 35 in the church, but I’m not sure.

My church distinguishes between youth and young adults. Youth are 12 to 18, or often 6th to 12th grade. Young adults are 18-35, though I think it should be 18-21. 21+ should be considered adults in my book, but that’s not how they do it. Whatever gets people connected to other faithful Catholics is fine by me.
We have a youth Mass and many do not participate in that after Confirmation or high school graduation. For Knights of Columbus, boys can join at 18. I am most sure the girls can join the Altar Society at 18, plus there are many ministries and committees they can join.

Since people are waiting longer to get married, I believe some parishes like to distinguish that group which is 21-35, as “most likely” single.
When we offer programs for that age group, we expect to see either single or young newly marrieds come for faith building and fellowship. Once people start having babies it’s a lot harder for them to be so active in the parish, although many do, and kudos to them!
The 21-35 are considered adults, but with separate issues, like dating with an objective of marriage, callings to various vocations, ethics in the workplace, care of older parents, concern as to how to best handle their giving options, etc. In other words, the things that couples decide & discuss together. This way they can share their thoughts with others of the same demographic.
Obviously couples of any age share some of these topics as well, but young people in the 21-35 age bracket are more comfortable sharing with people of the same age.
Just like an “Over 50” group would enjoy the same things, and share a similar level of catechesis.
