I know that usually on major feast days, the altar server, the deacon and the priest incense every place that Jesus is present: the altar of sacrifice, the gifts of bread and wine that become the Body and Blood of Christ, the priest, the scriptures (Jesus is the Word), and finally all the faithful together make up the Body of Christ.

My question is: After the deacon (or altar server) incenses the people and bows, are we supposed to bow back? Some people make the sign of the cross. Or do we do anything?

No. The rubrics give no instructions to do anything after being incensed.

Everywhere where I’ve witnessed this incensing happening (mostly cathedrals), I’ve seen that the people always bow back. If not in the rubrics, at least it is a custom.
