Right. Now… would his most recent parish have any information? If, at the time that he registered there, he said “I’m a baptized Catholic”, would they tend to just leave it at that, or would they likely have a notation as to when and where?

Baptismal or other sacramental information is not entered into that parish’s sacramental records-- only sacraments received at that parish are recorded (and to receive the sacrament you would first have to provide your sacramental records).

The marriage preparation file would contain a baptismal record presented at that time from wherever he was baptized. So, the marriage is entered into the sacramental record at that parish and the marriage record includes the baptismal information.

Then notice of the marriage is sent to the baptismal parish to record in the baptismal record.

Rather, I was thinking about the info that a new parishioner provides at the time he or she registers with the parish. (These days, that might include data that’s entered into a program such as PDS.)

Hence my question: at the time that a person registers with a parish, would it be more likely that the data collected is “John Doe is a baptized Catholic”, or “John Doe was baptized on 12/25/1950 at St Gregory’s in Philadelphia PA”…?

It has been my experience that most people who register in a parish are simply asked if they are Catholic or non-Catholic and whether or not a spouse and/or children are Catholic. The parish is unlikely to ask for baptismal information until such time as it is required for attendance in classes or reception of other sacraments.
