Hi! I’m 16 and my mom has asked me to help out this summer by making dinner several times a week. I was wondering if any of you would mind sharing some dinners that your families like so that I can get some ideas. Thanks in advance and God bless you! 🙂
 
Awesome Spaghetti Sauce

1 onion, sliced
2 cloves garlic, minced
1 can tomato sauce (just use the generic cheap stuff)
3 stalks celery, sliced
1/2 brown bag of mushrooms, sliced
2 tbs oil
1 lb ground beef or turkey
Parsley to taste
Salt and Pepper to taste

Saute onions, garlic and beef on medium heat until beef is cooked (brown). Drain excess juices. Add celery, saute for about 3 more minutes. Add tomato sauce and mushrooms. Cook until mushrooms are tender. Add parsley, salt and pepper. Serve over pasta (works great with rigatoni) with parmesan and a salad!

Quick Goulash

1 lb. ground beef
8 oz. elbow macaroni
1 small onion chopped
1/2 green bell pepper, chopped
1 or 2 cans condensed tomato soup
salt and pepper to taste

Brown ground beef with onions and pepper; drain. Meanwhile, cook macaroni according to package directions; drain. Combine pasta and ground meat in a large pan. Mix in condensed soup, salt and pepper. Add another can of soup if it seems too dry (you can add a little water so it won’t be too “tomatoey”.) Serve with a salad and garlic bread.

Another quick easy dinner: line a baking pan with foil. Arrange chicken leg quarters in pan. Rub with butter or drizzle with melted butter, sprinkle with salt or seasoned salt, pepper, and garlic powder. Bake at 350 degrees for about an hour, turning the chicken every 20 minutes or so to get the skin nicely browned and crispy. Serve with rice (just cook the rice and butter it; nothing fancy) and glazed carrots. Here’s that recipe: cut carrots lengthwise into quarters, making long carrot sticks. Cut them in half. Melt butter in a skillet, add carrots. Season with salt and pepper and saute them until they begin to soften. Sprinkle brown sugar over the carrots and continue to saute until the sugar has melted and the carrots are cooked through. Sorry I didn’t give you any measurements, just start with a little sugar and add more if needed!
 
If you can, I suggest picking up Taste of Home magazine (or look it up at the library) and look through for a lot of easy delicious recipes. They also have a publication called Quick Cooking. It’s all “real” food, not a lot of stuff that sounds like it came from a fancy restaurant, just “down home” cooking.
 
Here’s one we make often, because it’s so easy and the kids (2, 8, and 11) love it.

Beef and Noodles
1 1/2 lb ground beef
1 pkg. brown gravy mix
water
cooked egg noodles

Brown the ground beef. If using a stainless steel skillet, use a little oil or fat, so it doesn’t stick so much. Sprinkle in gravy packet. Stir until it is mixed in. Now here is where you can either cook the noodles ahead of time, and stir in with some water to make the gravy, only need about a cup of water this way, or you can cover the meat with water, add some uncooked noodles, say four handfuls of noodles, and then turn it down to a simmer and cook the noodles. Hope this is not too confusing. Please email me if you have any questions. I always add extra pepper and sea salt.

Potatoes, you dice them, you boil them till soft, you then toss them in a pan with hot oil, mix in some Mustard (that brown ucky looking sort) purple onions, then bacon. Very thick bacon, which has been snipped into squares about the size of, oh, checker squares.

And call it fried potatoe salad.

Hmmm . . . well, I can cook pretty well. I don’t have a ton of experience, but I can’t think of anything that I’ve ever ruined completely.😃 I bake goodies more thatn I actually cook, but I can make basic stuff - mashed potatoes (my specialty :)), spaghetti, chili, etc, and I’m pretty good at following recipes. As to cookbooks that we have . . . a couple of Rachel Ray, one Barefoot Contessa (her stuff tends to be pretty involved though), a Better Homes and Gardens one from the early 90’s (I think), and a random “Cooking With The Saints” one that has some pretty . . . interesting recipes.😉 Guess it makes sense, we have some pretty interesting saints!

Hi Gianna. I’m from California too! But now live in the southeastern U.S. I worked for a supermarket chain here… called “Publix”… for many years. They have a simple meal program called “Aprons”… that is AWESOME. You can get recipe cards to keep… and the meals are wonderful… simple… and mostly healthy!

Do you have a crock pot? Most crock pot recipes are really easy and use ingredients that are super easy to find. It’s also a great tool for the summer because you won’t heat up the house like you would if you used the stove/oven.

Grilling is another fun way to prepare meals. You could do burgers, hot dogs/sausages, chicken, or even get a little fancy and try kabobs. For grilling, if you try it, I’d recommend getting a meat thermometer so that you can make sure that everything is cooked all the way through. One of my favorite grilled side dishes is marinated veggies - in a large zip-top bag, marinate cubed potatoes, chunks of bell pepper (any color), thick slices of zucchini or summer squash, and onions with one bottle of your favorite Italian salad dressing overnight. Grill on low heat either directly on the grate or in a cast iron skillet.

Salads are another easy and tasty option. To your family’s favorite salad greens and veggies, consider adding tuna salad, chicken salad, chunks of cheese, cold cuts, leftover roasted chicken, or even fresh fruit. Serve with pita bread.

The Rachel Ray cookbook will probably give you the most practical ideas, but don’t be afraid to adjust the recipes to suit your family - cooking is more art than science.
 
Gianna, first off, 👍 for learning your way around the kitchen at age 16! I wish I’d got an earlier start; I’m 19 now and scrambling to learn before I leave home for college.

One of our favourite recipes for Fridays is a tuna casserole, which is very simple to make: pasta cooked according to the package, a couple cans of tuna, and a basic white sauce.

This Oven-Fried Chicken was very easy to make, though the cooking time was rather lengthy.

And I’m always on the lookout for new recipes, too, so I’ll be keeping an eye on this thread. 🙂
 
Catfish Wraps

Ingredients How you cook the fish is your call,

4 servings

1 1/2 pounds catfish fillets
2 tablespoons olive oil
1 tablespoon lemon pepper
1 lemon, juice only
1 lime, juice only
2 cups prepared coleslaw (I like the creamy kind)
hot sauce, Tabasco, etc.
1 cup shredded cheddar and Jack cheeses
4 large warm flour tortillas

Avocado and Tomato Salsa
2 ripe, but firm avocados, peeled and diced
2 limes, juice only
1 cup cherry or pear tomatoes, halved and drained (toss gently in a colander)
1/4 cup red onion, minced
2 garlic cloves, minced
3 tablespoons fresh cilantro leaves, chopped
2 tablespoons olive oil
salt and pepper

Combine ingredients in a bowl and toss gently.
Instructions Rub fish with olive oil and lemon pepper. Grill or cook in a hot well-oiled pan until just done. While cooking, squeeze lemon and lime juice over fish. To prepare wraps, lay out a warm tortilla and put cooked fish along the bottom third of the tortilla, leaving about 2 inches of space between the fish and the bottom edge of the tortilla. Stuffing ingredients must be flat, not mounded. Spoon some coleslaw onto the fish, add a dash or two of hot sauce and top with cheese. Spoon some of the salsa onto the cheese. Fold the bottom edge over the stuffing and fold one of the sides over towards the center to keep the stuffing from falling out. Continue rolling snugly from the bottom and serve with additional salsa on the side.

-any light white fish can be subsituted for catfish

Squirrel
Ingredients The squirrels are first fried and then simmered in liquid until tender. Young squirrels taste much better than old ones.
4 servings

4 young squirrels, each cut into 6 to 8 pieces
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1/4 cup all-purpose flour
8 slices bacon, chopped
1/4 cup onion, sliced
2 celery stalks, sliced
1 tablespoon fresh rosemary leaves, minced
2 teaspoon lemon juice
2 cups chicken broth
4 cups warm cooked rice

Instructions Combine salt, pepper, garlic powder and flour. Dredge squirrels in flour mixture. Cook bacon in a heavy skillet over medium heat until browned. Fry squirrel pieces in bacon grease until medium brown. Add remaining ingredients except rice and reduce heat to simmer. Cover and cook for about 1 1/2 hours or until squirrel pieces are tender. Serve with warm rice.

Braised Rabbit
You can substitute rabbit for just about any recipe that calls for chicken.
4 servings

2 young rabbits, each cut into 6 to 8 pieces
salt and freshly ground pepper
1/2 cup all-purpose flour
3 tablespoons olive oil
1 medium onion, finely diced
3 cups dry red wine
1 cup chicken broth
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
2 bay leaves
2 sprigs fresh rosemary
1/2 teaspoon salt
2 firm, slightly not-quite-ripe pears; skin removed, cored and halved
3 tablespoons chilled butter

Instructions Season rabbit pieces and dust lightly with flour. Heat oil in a large skillet over medium-high heat. Add onion and sauté for 3 to 4 minutes. Add rabbit pieces and brown each evenly. Add wine, broth, vinegar, sugar, bay leaves, rosemary and salt. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 30 minutes. Add pears to the pan, cover and simmer for 30 minutes more. Remove rabbit and pears and arrange on plates. Remove bay leaves and rosemary from pan. Whisk in butter until melted and spoon sauce over rabbit.

**Opossum and Sweet Potatoes **
INGREDIENTS:

1 Opossum (about 2-1/2 pounds)

2-1/2 teaspoons salt

Pepper to taste

Flour

1/2 cup water

4 medium sweet potatoes

2 tablespoons sugar

PREPARATION:

Trim excess fat from opossum and discard. Wash quickly inside and out with warm water; drain thoroughly.

Rub salt and pepper well into the opossum inside and out. Sprinkle inside and out with flour. Lay the opossum on its back in a roasting pan.

Add water, cover and bake at 350 degrees F until about half done (45 to 60 minutes).

Split peeled potatoes in half lengthwise and place in pan around opossum. Add more water if needed.

Cover sliced potatoes and opossum and cook 30 more minutes.

Wild Duck Pizza
Serves 4-6

2 10-12" pizza crusts
1 cup prepared pizza sauce
1 cup pepperoni, thinly sliced
4 skinless duck breast fillets, cooked, cooled and thinly sliced
1 1/2 cups shredded cheese, your choice
Additional toppings as desired
  1. Preheat oven to 450 degrees.
  2. For each pizza crust, spread 1/2 cup sauce evenly over dough. Arrange pepperoni and duck over sauce. Top with shredded cheese and any additional toppings.
  3. Place on a pizza screen, pan or stone in the preheated oven for 10-12 minutes or until cheese is melted and lightly browned. Slice into wedges and serve.
-store bought duck will work too

**Rattlesnake Lupinaci **
INGREDIENTS:

rattlesnake, cut into 4" - 6" strips

1 tsp butter

fresh mushrooms, sliced

1 large onion, chopped

6 oz white wine (Syrah/Shiraz)

4 oz oyster sauce

PREPARATION:

In a saute pan, melt the butter. Add the sliced mushrooms and onions. Saute until tender.

Add the snake strips. When the meat is 3/4th cooked add the wine. (flame out wine)

After wine liquid is cooked in, add the oyster sauce.

Cook until sauce begins to simmer.

Serve with baked potatoes and/or greens. Goes great on a bed of bbq’d squash.

i love to cook, and have a large file on the computer with recipies for pretty much anything. these are not your standard menu items, but very good. also variety is the spice of life…

Well, if you have a crockpot then this is a good recipe that is enjoyed by my family. And it’s EASY to make too!

Crockpot Chicken Stroganoff:
3 boneless skinless chicken breasts
1 (12 ounce) container sour cream
1 can cream of mushroom soup
1 package dry onion soup mix
Place chicken in crockpot. Mix together remaining ingredients and pour over chicken. Cook on LOW for 4 to 6 hours or until chicken is tender.
Serve over cooked noodles.

(p.s. Do the grocery stores in Texas sell rattlesnake in the meat department? I would imagine that it would be rather dangerous for one to try to trap the “main ingredient” on their own!).

rest assured rattlesnake does NOT taste like chicken. i have seen it sold in a couple places but those are few and far between. it may seem stereotypical but there are tons of them down here. so its not too hard to get one. but i have not heard of trapping except for things like the rattlesnake roundup. most folks i know just shoot them. i’ll be honest i dont even wanna get close enough to hoe or club one. in fact i have only killed 2 that i didnt gun down-1 got hit with my truck, and the other i threw a rock at(bigger that a basketball rock)
 
Here is a really easy recipe.

Perogie Casserole

2 cups of pasta sauce (red tomato sauce)
2 cups of shredded cheese (whatever kind you like)
1 cup of diced bacon or prosciutto
2 bags or 1 large bag of frozen perogies

Boil the frozen perogies in water for about 2 minutes and drain or just defrost the perogies
Put the perogies in a lightly greased casserole dish
Add diced bacon and pasta sauce and stir it all together
Top it with the cheese
Back in oven at 400 for 20 minutes

It comes out really tastey and everyone that has tried it loves it. It’s so easy to make too!

this is a good recipe, my wife uses a similar one. if i could make a suggestion dont get the saltless perogies, and if you do salt the water you boil them in, otherwise they are fairly bland.
