DH bought an almost 10 lb. ham last week. I served it for Sunday dinner, then made ham and potato casserole on Monday. There’s still a lot left–too much yet for pea soup. What else can I do with the leftovers?

Made this with my leftover Christmas Ham. Where it calls for pork fatback, just use the fatty portion at the top of the ham- works just as well.

FREEZE IT! Save it for SOUPS!
I made a potato soup a few weeks back using some frozen leftover ham and it was GLORIOUS!

You sound like me. First I do the ham dinner, then the scalloped ham and potato cassarole, then the pea soup!
We also do ham sandwiches on homemade bread, fried ham with pancakes for dinner or saturday morning breakfast, or I freeze some for another round of scalloped potato and ham cassarole (since it’s my husband’s favorite) a couple months later.
Scrambled eggs with ham, peppers, and onions is good for dinner, too. I like the pizza suggestion, especially if you include pineapple!

never cook anything else, it really is very good, and has the advantage of being online.
I have made any number of variations on this with ham…In fact, my emergency shelf always has a small (refrigeration not required) canned ham waiting for me to make a ham cassrole just because it is so easy & tasty as well.

Best thing to cook with a leftover ham bone is white beans and rice. Serve it up with a little mayo and some fried catfish and it is my favorite dish.
