Egg gravy -

Plain white gravy, add crushed/chopped hard boiled eggs - and serve on toast.
Mmmm. I love that. I had forgotten about that. We used to make them at school. But we called them eggs a la goldenrod.

You had to hard boil the eggs. mix the egg white parts in with the white sauce. Pour that over the whole wheat toast and then crumble the egg yellows over the top. Then shake some fresh black pepper on the top.

For folks who are white-sauce challenged, you can buy a bottle of fettucine sauce in the sauce aisle at the grocery store.

Another thing we used to have was mushroom toast. Same whole wheat toast. Take a can of Campbell’s mushroom soup but don’t add the water. Just heat it directly and the pour it over the toast. Yummm.

The Banana Dog. Spread some peanut butter on a slice of bread or hot dog bun. Slap in a banana, peeled. Add some more peanut butter (my choice) or jelly over the top.
Yum. Back home we made this on fresh bread – whole wheat, with fresh slightly chilled butter on it. then you slice the bananas on. It’s the butter that makes it.

I would eat that for brekkie during Lent. But the following one is too decadent.

Cinnamon Toast: slather butter over multi-grain cranberry buns cut lengthwise in two. Sprinkle brown sugar over that. Then sprinkle cinnamon over that. Place on the top shelf of the over under the broiler and broil until sugar caramelizes. You have to watch them or else they will ignite.

Actually I am not going whole hog on Lent. I am mostly going to eat brown rice and mixed beans with salad. On Friday I am going to fast and on Sunday I am allowed a chocolate but only because chocolate is good for the heart.

Peanut Butter and Jelly Sandwich

2 slices of white bread
JIF Peanut Butter (creamy)
Welches Grape Jelly

Cover one side of a piece of bread with a thick layer of peanut butter. (use a knife for this) Cover one side of the other piece of read with the jelly. It could be substitued with Apple Jelly or others. Being careful to keep the bottom crusts aligned with each other, put the 2 pieces of bread together so the peanut butter and jelly are touching.

Important Serve WITH a beverage.

😃 I think I can handle that. Thanks for the instructions though. :rotfl:

One of my favorites is Fried Macaroni.

Simple to make and yummy. Great as a side dish with Salmon Patties. Or so Salmon lovers tell me. I hate fish. 😃

Cook Macaroni, drain well. Place in skillet with a little bit of oil on Medium to medium low heat. Pour beaten eggs over Macaroni, salt, pepper to taste. Cook until eggs are thouroughly cooked and mac is slightly beginning to brown.

Optional, you can add diced onions, cheese, green peppers ect.

I hate seafood too. I was raised vegetarian, though, so cooking without meat comes naturally. Some vegetarian meals:
Strata -sort of like quiche, a baked egg dish with “croutons” (squares of toast) on the bottom, any vegetables you like and chees on top - you refrigerate it all day before you bake it.
Lentil or other bean soup with rolls or dumplings - very cheap, very Lent-ish.
“Pasta Fagioli” - Pasta with white or pink beans
Bean Burritos w/ lettuce, tomato, sour cream & salsa
Scrambled eggs with sweet pepper, grated carrot, onion, etc. (or put it on bread and make a sandwich)
Vegetarian lasagna (w/ broccoli, spinach, ricotta and mozzerella)
Stir fry of vegetables and tofu marinated in soy sauce & garlic. If you add soy sauce, a little peanut butter, garlic and ginger to the pan it makes a “chinese food” type sauce.
Fake meat - Quorn, Morningstar farms and Boca are good brands.

A better burrito
**1 pot, easy to make, great taste
**Appreciate the simple things again!

1 1/2 teaspoons vegetable oil
1/2 small onion, diced
2/3 cup uncooked long-grain rice
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
3 ounces canned diced tomatoes
1 teaspoon salt
1 1/2 cups water
1 can black beans, drained
1 can corn, drained
Tortillas

In a large saucepan, heat oil over medium heat. Stir in onion and saute until translucent.

Pour the rice into the pan and stir to coat grains with oil. Mix in cumin, chili powder, tomatoes, salt and water. Cover, bring to a boil, then reduce heat to low. Cook at a simmer for 20 to 30 minutes or until rice is tender. Stir occasionally. When finished, mix in black beans and corn then serve in warm tortillas.

** Optional:**
1/4 tsp more cumin
1/4 tsp more chili powder
Entire onion
Substitute RoTel or salsa for diced tomatoes
Mix in extra RoTel or Salsa after cooking for more flavor
Add diced jalepeno
Add 1 tbsp minced garlic
Rinse the black beans
Use Summer Crisp canned corn

I personally do all the above. I add a few finely diced slices of jalepeno, some garlic, and 3 more ounces RoTel to the beans and corn and allow them to warm in a seperate pan while the rice is cooking. Great tasting, great filling, and easy clean up!

“I am also looking for a recipe for something we used to make for GS camp a family size “souffle” with an egg mixture over cheese, cracker crumbs or pepperidge farm bread, potatoes, chopped veggies etc. It was called a farmhouse breakfast.”

Sounds like Cheese Puff Pudding - a recipe passed to me by my Gramma. It’s so old that the original called for “a moderate oven,” instead of a temperature.

Preheat oven to 350 F.

6 slices of bread
1 1/2 cu grated cheese
1 1/2 cu milk
2 beaten eggs
1/2 tsp salt

Place 3 pieces of the bread around the bottom and sides of a buttered baking dish.

Set aside 1/2 cu of the cheese. Grate the rest of the bread, and gently mix mix it with the cheese, milk, eggs, and salt. Pour in the baking dish. Top with the rest of the cheese.

Bake uncovered for 45 minutes. For high altitude, give it about 5 more minutes.

I’ve added all sorts of things to this in the past - especially garlic, and more cheese! If you add more than a bit of extras, increase the baking time accordingly.

made Clam Chowder last night (actually potato-leek soup with clams added)

Grated one large baking potato (but actually boiling potatoes work best for chowder, make it less sticky and starchy) you can also use 1 1/2 cups grated frozen potatoes or leftover mashed potatoes

saute one cup chopped leeks in 2T real butter until soft, not brown
add
2 cups water
grated potato
1 T chopped parsley
1/2 T dried tarragon
veggie boullion cube (or chicken, ok for Lent)
1 small can corn, drained (or 1/2 C frozen corn)
bring just to a boil, then simmer for 15 minutes
add one can of minced clams with juice (if you like the whole baby clams use them instead)
one 3 oz package of crabmat
simmer for 10 more minutes
stir in 1/2 cup heavy whipping cream or half/n/half, simmer 3-5 more minutes
serve with oyster crackers, croutons, or grated cheese

you can prepare ahead of time and just add the cream when you reheat and serve.

makes soup for 4, or main dish for 2
we had it with a spinach salad topped with hard boiled egg, avocado, red bell peppers, and mushrooms.

you can substitute non-fat milk and use olive oil, but the richness is what makes the chowder.

This might make some of you gag, but it is really good! My mother used to serve it to us during Lent and at other times. We are a family with 9 children on a strict budget, so this meal was cheap and satisfying. I have never heard of anyone else who has tried it or even heard of it. We called it Noodles and Prunes - just stew some prunes and serve them over noodles with the juice. Sounds weird, but trust me - it IS good!

i will definitely be using some of these recipes.
something new i have discovered: fish tacos! oh are they good. each one uses 2 corn tortillas, a 5 or 6 bite piece of fried fish, cabbage, a white sauce, fresh salsa and lime!! i’ve never yet tried to make them, but i get them at del taco all the time.👍

I rediscovered this recipe. The kids don’t like it, but it was a hit when served to adult dinner guests. Super easy…

Easy Pasta Primavera

1/2 16-ounce box ziti
1/2 bunch asparagus (about 12 spears), cut into 2-inch pieces
1 16-ounce tub mild fresh salsa
4 ounces soft goat cheese
1 teaspoon sugar
1/2 16-ounce bag frozen cooked shrimp, thawed

Cook the pasta according to the label directions, adding the asparagus to the boiling water during the last 5 minutes of cooking. Drain. Meanwhile, heat the salsa in a large skillet over medium heat, stirring frequently until the tomatoes release their
juices, 2 to 3 minutes. Stir in the goat cheese and sugar and heat until smooth. Add the shrimp and fold in gently until heated through, about 2 minutes. Pour the sauce over the pasta and toss.

Hello

Tried this 100% no meat soup recipe last Friday. Its very good and filling with no chicken or beef stock.

2 cups dried lentils
2 tbsp chopped garlic
2 med onions chopped
2 tbsp olive oil
6 carrots sliced 1/2" pieces
4 med patatos cut 1" cubes(I left the skin on)
12 cups of water
1 bay leaf
1 tbsp dried parsley
1 tsp thyme
1 tsp oregano
1 tsp black pepper

Just put everything in a large soup pot,or crock pot and simmer until lentils are soft. This takes a few hours,if you start in the morning you will have soup for lunch and dinner.Enjoy and God Bless.

**A very easy sandwich we enjoy for Lent is a grilled mozzarella, pesto and tomato. Use a nice wheat bread, spread with pesto, place sliced cheese and tomato and grill.
Blessings,
J

Me as well !

Julchild, is there something particular about pesto that an Italian person would really appreciate? Like for example, my friend (who is not Italian) said it should be much thicker and greener than what you see in the stores, because of the basil. Any tips? Any recipes?
