I just took HV as an example of document some posts ago to which there is still a lot of discussion about theologians. Do not worry I am not talking about contraception or abortion but about the classification of documents according to infallibility.
Okay. Anyway I’ll let others come in now.
For me the CCC is enough to know what the doctrines are.

Isn’t there, in fact, some kind of gigantic compendium of Catholic doctrines ranked according to certainty? I’m thinking either Ott or Denzinger, can’t remember which one.

That would seem to fill the poster’s need, which the CCC (while very useful as a compendium of doctrine) does not exactly meet.

Therein lies the problem. Documents cannot be infallible, only teachings on faith and morals. So, there can be no list of infallible documents.

Please check out what infallibility means at newadvent.org/cathen/07790a.htm

I understand that the Catechism of the Catholic Church is an infallible document in that it was issued by the Holy Father and has the universal approval of all of the bishops of the world.
No, the catechism is not put forth as an infallible statement. It was never intended to be such. Although, many of the teachings therein have been infallibly defined,

As for Evangelium Vitae, I would say it contains three infallible statements under the definition of Ordinary Magesterium. The document even footnotes the part of Lumen Gentium which discusses infallibility.
