That brings up an interesting point for me. RCIA is not a slam bam thank you Mr/Mrs/Ms/Miss program. Shouldn’t candidates have a better idea of what to consider in a godparent to begin with? Do you mean godparent, or sponsor? Anyway, I would think the person in either title be a person who has at least been to Mass a few times to know what is appropriate or not.
godparent = sponsor

some parish priests would require some sort of proof that the godparent/sponsor would be a practicing Catholic, like a letter or certificate from their parish (if other than the parish they will be a sponsor). but that doesn’t always happen

In the case of RCIA the sponsor and the godparent are not necessarily the same person. The sponsor is often assigned by the parish, the godparent is chosen by the person to be baptized. He/she may well ask the sponsor to be godparent but may have someone totally different in mind.

You’d be surprised at what people who go to church on a fairly regular basis consider appropriate.
