Saints - Legends or Reality?

How does the Church know if some of the stories of the saints are legends or real events? And, does it really matter if the story is a legend or not if they help us understand the spirituality of the saint and help bring us closer to Christ?
 
I would think documents, witnesses, etc…are of value of confirmation for Saints prior to the 19th century or so before film and such existed. Is there a specific example you are questioning?

Any miraculous event such as

St. Felix & the spider who spun a web outside a cave to
hide him.

St. Francis & the wolf he convinced to no longer eat the village people’s sheep.

St. Anthony (I think it was him) and the donkey who bowed before the Eucharist rather than eating after 3 days of starvation.

And there are many more.
