I know that a long while back some of the saints, like St. Christopher, were removed from the Universal Calendar based on a lack of historical information regarding the details of their lives. Do people still ask these saints for intercessional prayers? If so, why? If a particular saint has been deemed to be folklore by the Church, where is the merit in asking for the prayers of a saint who likely did not exist?

The Church has not removed any Saints. It just removed some Saints from the Universal Calendar for celebrations. Saints were removed for various reasons, including the one you mentioned. Just removing them from this list doesn’t change their status as Saints. You can still offer up prayers to them.

They haven’t labeled the Saints as folklore, they just aren’t sure of all the facts about the Saint. Even if you pray to a Saint that may be “folklore”, God will still use your prayer in a way that he sees fit.
