Saints who loved nature

St. Kevin of Glendalough in Ireland lived as a hermit for 7 years and was a lover of nature.

There’s a legend about him that he prayed for so long with his arms outstretched, that a blackbird came and built a nest in the palm of his hand, laid her eggs and was able to nurture her chicks.
 
St. Francisco Marto. Sister Lucia’s memoirs talk about how much he loved nature and birds.

St. Seraphim of Sarov lived in the woods and had a bear.

I think St. Hildegard von Bingen might be more popular in Europe. I have a book, Wisdom From the Monastery; A Program of Spiritual Healing, by Peter Seewald (the same author who published the interview book with Pope Benedict), and St. Hildegard’s influence is apparently still much appreciated among monastic communities in Europe.
 
St. Meinrad of Einsiedeln was another holy hermit who lived close to nature in the alpine forest of Switzerland. Nature seems to have loved him too, for after he was murdered by two thieves, a pair of ravens chased and harassed his attackers until they gave themselves up to the authorities and confessed their crime.
