given that in Judaism the seventh day was the (in loose terms) sabbath, why did the holy day become changed to a Sunday?
 
The resurrection of Jesus Christ. Sunday is celebrated as the Lord’s Day.
 
Sunday is sometimes referred to as the 8th day of Creation or the 1st day of the New Creation because it was the day on which Jesus rose from the dead. As Christians belong to this New Creation, we celebrate on this day in honor of Christ’s resurrection, his defeat of death, and in celebration that we have been made into new men, as St. Paul puts it. Basically, the Old Law has been fulfilled by the New Law.
 
12 “‘Observe the sabbath day, to keep it holy, as the Lord your God commanded you. 13 Six days you shall labor, and do all your work; 14 but the seventh day is a sabbath to the Lord your God; in it you shall not do any work, you, or your son, or your daughter, or your manservant, or your maidservant, or your ox, or your ass, or any of your cattle, or the sojourner who is within your gates, that your manservant and your maidservant may rest as well as you. 15 You shall remember that you were a servant in the land of Egypt, and the Lord your God brought you out thence with a mighty hand and an outstretched arm; therefore the Lord your God commanded you to keep the sabbath day. (Deuteronomy 5:12-15)
The Jewish Sabbath was a weekly commemoration of their liberation from their Egyptian slavery that occurred on the seventh day of the week (a Saturday). Christians weekly commemorate an even greater event than the liberation of the Jews from their Egyptian slavery, namely, mankind’s liberation from their slavery to sin and death which was accomplished by the resurrection of Jesus Christ from the dead on the first day of the week (a Sunday). The weekly commemorations of both Jews and Christians are patterned after God’s example of resting on the seventh day of creation.

In Paul’s early churches the Christian day of worship had already been switched from Saturday to Sunday. This is mentioned twice in the NT (links below).

In Hebrew, “Sabbath” is the only day of the week that has a real name of its own. The other days are just numbered, from “first day” (Sunday) thru “sixth day” (Friday).

Celebrating the Sabbath on the seventh day honored God as our Creator.
Jesus redeems us and makes us a New Creation.
Jesus honored the Eighth day by rising and appearing on that day.
So, we have a “new” seventh day that honors Jesus and His work in making us a New Creation.

St. John tells us that there were seven days from “In the Beginning” to the beginning of Christ’s work here at Cana.

These seven days correspond to the seven days of creation in Genesis.
John 1: 1, 29, 35, 43. “In the beginning…
(29) The next day…
(35) The next day…
(43) The next day…” this brings us to the fourth day. The next reference to time is found in

John 2:1 “On the third day there was a marriage at Cana…”
But the third day from the fourth day is the seventh day.

Thus the third day and the seventh day are the same day. In the New Covenant of Jesus Christ we have a new seventh day, but it is also the third day - the day He rose from the dead, Luke 24: 46.

Saint John makes these parallels with the book of Genesis, including the new seven days, so that we might see that we are a new creation in Christ. Along with the New Covenant and the new creation we have a new seventh day.

Because the Sabbath belongs to the old covenant and Sunday to the new covenant.
 
Saturday is still the Sabbath. Sunday is the Lord’s Day…the day of the new creation…the 1st and 8th day. The Church decided to worship on Sunday to 1) distance themselves from the Jews and 2) b/c it is the Day of Resurrection. (BTW, Christ even rested in His tomb on the Sabbath 🙂 )

The Eastern Churches still acknowledge Sat as the Sabbath in that the Fasting that is done throughout the year is always lessened in severity on Saturday and Sunday.
