Well, the Old Testament…
As for the New Testament, the Word “dwelt among us” and revealed to his apostles all that there was to reveal . Scripture ended with the death of the last apostle. The scriptures received by the Church are genuine because tradition has linked them to genuine apostolic teaching. Other writings that have come down are not recognized a such .

that’s not to say that the many volumes we’ve been blesses with since the time of Sacred scripture or not important. However, there will not be any additions to the bible.
The Catholic church has been blessed with many wonderful theologians and gifted writers. Are you asking because you’d like to review some, are you looking for something specific? Or did your question have more to do with “how do we know that the writings of “non-catholic person A or B” are not Scriptural…” or something like that.

The Bible Canon was determined by the authority given the bishops through the Holy Spirit in their Apostolic Office. There were many other writings around at the time including the heretical gnostic gospels. Those bishops made very clear what was scripture and what wasn’t. We should trust that God guided his people in this as he had for thousands of years before.
