Kneeling in the East is a sign of repentance. In the West, a sign of submission to a greater authority
Generally speaking, though some in the East (e.g. Greeks) are not unknown to kneel out of reverence to the Holy Mysteries.

You can prostrate too. It is not practical done in public but in an adoration room, if your chapel has one; or your own prayer room at home.
 
I’d say most Lutherans do. At least those of us who care what our catechisms say.
I have seen a relatively few number of Lutherans who do the sign of the cross - I like to see it but was never taught either in the first church I belonged to or in the Synodical college I attended.

Which part of the Catechisms speak to doing it, Don?

One place is morning and evening prayers.
. Morning Prayer.
1] In the morning, when you rise, you shall bless yourself with the holy cross and say:
In the name of God the Father, Son, and Holy Ghost. Amen.
2] Then, kneeling or standing, repeat the Creed and the Lord’s Prayer. If you choose, you may, in addition, say this little prayer:
