I know that we must visit the Confessional once per year. Does it matter when this is or does it have to be during the Easter Season?

You need to seek confession any time you commit a mortal sin. And at LEAST once a year.
 
You are required (by precepts of the Church) to receive the Eucharist at least during the Easter season, and you are required to be in a state of grace to receive the Eucharist. Confession confers sanctifying grace.

So, technically it doesn’t matter when (although I would seriously note Tom’s post), but the requirement to receive during Easter will likely govern the timing.
 
What does ‘the Easter Season’ mean? Does this cover Ash Wednesday → Easter → Pentecost (Lent and the Easter period) or just Easter → Pentecost (just the actual Easter period)?

The Easter season begins at the Easter vigil and ends on Pentacost Sunday.
