Is there any sins that God can’t forgive?
I desire trust from My creatures. Encourage souls to place great trust in My fathomless mercy. Let the weak, sinful soul have no fear to approach Me, for even if it had more sins than there are grains of sand in the world, all would be drowned in the unmeasurable depths of My mercy. (1059)

There is a single sin that will not be forgiven:
Because of this I say to you, all sin and evil speaking shall be forgiven to men, but the evil speaking of the Spirit shall not be forgiven to men. (Matthew 12:31, YLT)
Of course, God, being all-just and sovereign, would allow a pardon if it is within His mercy (which He will give to who He chooses (cf. Romans 9:15-16, Romans 9:18)). Yet, Christ makes it clear that it “shall not be forgiven to men.”

So it is not just being disrespectful to the Holy Spirit or anything. This is blasphemy of the Holy Spirit (cf. Mark 3:29). The blasphemy of the Holy Spirit is committed when one rejects the forgiveness of sins; their heart is hardened and they will not accept Christ (cf. CCC 1864).

The sin against the holy spirit or blasphemy of the holy spirit is called unforgivable because this type of attitude toward the holy spirit is dangerous. If someone utters blasphemy of the holy spirit it can be forgiven if they repent but most people that say things like this towards the spirit do not want forgiveness and hardend their heart toward the love of God. Every sin can be forgiven but what this bible verse is saying is that if we die in a state of mortal sin the sin of blasphemy or any other mortal sin becomes unforgivable because they did not repent. If you follow the word of God and pray to Him and repent your sins you cannot commit the sin of blasphemy of the holy spirit.
 
So…not trusting in God is the unforgivable sin? that seems a little harsh to me. Complete trust in something is very difficult for some people.
 
All sins can be forgiven if the sinner truly repents, but …

Q. 433. What are the sins against the Holy Ghost which Our Lord said will not be forgiven either in this world or in the next?

A. The sins against the Holy Ghost which Our Lord said will not be forgiven either in this world or in the next, are sins committed out of pure malice, and greatly opposed to the mercy of God, and are, therefore, seldom forgiven.

I am glad that I do not use the Baltimore Catechism. It is too strict and it leaves you with little hope.

The Catechism of the Catholic is a little more detailed:

1864 "Therefore I tell you, every sin and blasphemy will be forgiven men, but the blasphemy against the Spirit will not be forgiven."136 There are no limits to the mercy of God, but anyone who deliberately refuses to accept his mercy by repenting, rejects the forgiveness of his sins and the salvation offered by the Holy Spirit.137 Such hardness of heart can lead to final impenitence and eternal loss.

2088 The first commandment requires us to nourish and protect our faith with prudence and vigilance, and to reject everything that is opposed to it. There are various ways of sinning against faith:

Voluntary doubt about the faith disregards or refuses to hold as true what God has revealed and the Church proposes for belief. Involuntary doubt refers to hesitation in believing, difficulty in overcoming objections connected with the faith, or also anxiety aroused by its obscurity. If deliberately cultivated doubt can lead to spiritual blindness.

2089 Incredulity is the neglect of revealed truth or the willful refusal to assent to it. "Heresy is the obstinate post-baptismal denial of some truth which must be believed with divine and catholic faith, or it is likewise an obstinate doubt concerning the same; apostasy is the total repudiation of the Christian faith; schism is the refusal of submission to the Roman Pontiff or of communion with the members of the Church subject to him."11

2091 The first commandment is also concerned with sins against hope, namely, despair and presumption:

By despair, man ceases to hope for his personal salvation from God, for help in attaining it or for the forgiveness of his sins. Despair is contrary to God’s goodness, to his justice - for the Lord is faithful to his promises - and to his mercy.

2092 There are two kinds of presumption. Either man presumes upon his own capacities, (hoping to be able to save himself without help from on high), or he presumes upon God’s almighty power or his mercy (hoping to obtain his forgiveness without conversion and glory without merit).

2094 One can sin against God’s love in various ways:
  • indifference neglects or refuses to reflect on divine charity; it fails to consider its prevenient goodness and denies its power.
  • ingratitude fails or refuses to acknowledge divine charity and to return him love for love.
  • lukewarmness is hesitation or negligence in responding to divine love; it can imply refusal to give oneself over to the prompting of charity.
  • acedia or spiritual sloth goes so far as to refuse the joy that comes from God and to be repelled by divine goodness.
  • hatred of God comes from pride. It is contrary to love of God, whose goodness it denies, and whom it presumes to curse as the one who forbids sins and inflicts punishments.
