It is a link to an old testament prophecy. The old testament was in many respects the blueprint for the new. Many of the sayings that Christ said were direct quotes of old testament passages. Remember that Christ was generally thought of as an extremely gifted teacher rabbi and interpretor of the Jewish Law by his contemporaries. The realization that He was indeed divine came later, after his death and resurrection. I believe the Son of Man reference that is usually referred to came from the Book of Daniel and is as follows:

I saw in the night-visions, and, behold, there came with the clouds of the sky one like a son of man and he came even to the ancient of days, and they brought him near before him. There was given him dominion, and glory, and a kingdom, that all the peoples, nations, and languages should serve him: his dominion is an everlasting dominion, which shall not pass away, and his kingdom that which shall not be destroyed.

That is not the only reference to Son of Man but it is one of the best known and one most often associated with Christ as a foretelling of his coming…

It also relates to Christs divinity. Son of Man would divinity while Son of God would indicate humanity.

It is a Messianic title take from Daniel 7:13-14
I saw in the night visions, and, behold, one like the Son of man came with the clouds of heaven, and came to the Ancient of days, and they brought him near before him.

And there was given him dominion, and glory, and a kingdom, that all people, nations, and languages, should serve him: his dominion is an everlasting dominion, which shall not pass away, and his kingdom that which shall not be destroyed.

Some have, unfortunately, taken this title as something to do with Christ’s humility, but the text does not support this. It has to do with His Supreme Sacred Kingship as God.
