Is there any criteria of how to separate the Spiritual and Carnal ?
How carnal are the alcohol drinking, dancing or card - playing ?
How far we can mistrust our flesh ?
 
Hmmm…all of the things you mentioned could be either sinful or not sinful.

Drinking alcohol is certainly not sinful in and of itself, but getting drunk is.

Card-playing is certainly not sinful in and of itself, but doing so excessively and risking your personal or family finances in the process is.

Dancing is certainly not sinful in and of itself, but dancing in an impure fashion or in a way that is an occasion of sin for you is.
 
Carnal means of the “flesh” and it needs contextual description. All of the things you mentioned are potential sources of sin if pursued for the purpose of “inordinate pleasure” or exceeds ethical limits.
 
What’s wrong with the Church Legalism then ?
If the Church forbids all those things by the rules :
  • No dancing, no card playing , no alcohol , no forbidden music ?

Remember that God created the world as good. We enjoyed the garden of Eden. It was a nice place. Now that we are fallen, it is still good to enjoy the things of creation, but because of how we are now, we tend to go overboard, to prefer creation over God, to have disordered emotions about creation, to envy and be greedy. Being “of the flesh” is undesirable, so we need to know what it means. Here are two biblical descriptions:
1Cor 3:3:
For as long as there is jealousy and quarreling among you, are you not of the flesh, and behaving according to human inclinations?
Gal 5:
Now the works of the flesh are obvious: fornication, impurity, licentiousness, 20 idolatry, sorcery, enmities, strife, jealousy, anger, quarrels, dissensions, factions, 21 envy, drunkenness, carousing, and things like these. I am warning you, as I warned you before: those who do such things will not inherit the kingdom of God.
See how both quotes mention strife/quarrels? James talks about this. He talks about our desire gone wrong.
James 4:2 You want something and do not have it; so you commit murder. And you covet something and cannot obtain it; so you engage in disputes and conflicts.
Drinking a glass of wine need not indicate desire gone wrong. It does not need to be a sin. It can be like:
1 Timothy 5:23 No longer drink only water, but take a little wine for the sake of your stomach and your frequent ailments.
Dancing need not be licentious. It can be like:
Psalm 150:4 Praise Him with timbrel and dancing; Praise Him with stringed instruments and pipe.
Doing things “in the flesh” is not just about what we do, but what is in our minds. Do you have your mind set on envy, strife, lust, or on things of the Spirit? Dancing can be good. Dancing can be bad. Not every physical thing that seems good to us as men is bad.
