One couldn’t use the vocative and say Salve, diacone!? It’s been a few years since I had Latin, so I don’t remember. Typically, Latin isn’t used for conversation nowadays, is it? I know of some conferences in Europe where they are attempting to revive it.

I believe Andrew is right, you should use the vocative rather than the nomnative, so ‘salve diacone’.

There is really only one fixed greeting phrase for anybody and it’s “Laudetur Iesus Christus” (Praised be Jesus Christ), regardless of the status of the greeted person. That’s the closest to a prescribed greeting you can get.
I use “Laudetur Iesus Christus” whenever abroad. The answer is “semper” (always), although there are longer versions.
If you had to address one in a letter, you could start with “Reverende Diacone” as a counterpart of your secular Dear Sir.

Status? remember that deacon is servant, one who should be either ignored or at least tolerated.There is really only one fixed greeting phrase for anybody and it’s “Laudetur Iesus Christus”, regardless of the status of the greeted person. That’s the phrase I use anywhere abroad.
So I guess the answer is greet him with what I said above.

Everybody has status, high or low. And deacon is still clergy and in high orders, which is an honour already, above a layman.
