Very simple question…

I am a practicing Catholic, and more or less a defender of the faith…

But how could the Holy Church venerate St. Christopher and George when their existence is in question?

Their existance is not in question. Some of the “facts” about them may be.
 
All that happened with St Christopher was that his liturgical feast day got “demoted.” From that spread crazy rumors — that the Catholic Church had “gotten rid” of him, that he had turned out not to exist, etc. No such thing happened. He is still a saint, he still has a feast day, he didn’t go anywhere.
