I’m looking for Catholic perspectives on how to do deal with lust, especially to fetishes that lie outside the norm. What can be done in dealing with these, as they can be isolating and problematic?

The Catholic perspective is really Jesus’ perspective in that lust is a very serious sin. As Jesus said when one lusts he already commits adultery in his heart. The gift that God gave us in our sexualtiy is meant to be expressed within the context of marriage. I’m not sure exactly what you consider a fetish but again any thoughts of lust can be sinful. So, pray and seek counsel from those who perhaps struggle with the same issues as yourself. Yes, when Peter lost focus on Jesus he sank and Jesus had to reach out and save him. How many times are we loosing focus and sinking. Thank God that His mercy is infinite for those who seek it.
