I am wanting some study material over the topic of holy communion, as us non Catholics call it. Any suggestions? I would also like to know the symbolgy associated with the ritual

For the symbolism and more importantly the reality behind Holy Communion read the Gospel of John, Chapter 6. That should do it.
 
You might also want to get your hands on the book, “God is Near” by Pope Benedict XVI as it gives a rock solid explanation on the Holy Eucharist. You can find it on www.amazon.com or at any Catholic bookstore. Ignatius Press is the publisher.

The symbolism arises from the Passover. The popular former Protestant, Scott Hahn, treats this beautifully in “The Fourth Cup”. Select the text and copy it. The web page is a GHASTLY combination of red-on-red that is murder on the eyes.

That site covers the big 5 objections - Purgatory, Mary, the Saints, the Eucharist, and the Papacy. Once these are out of the way, you’re basically home-free. 👍
