Vespers on Saturday night inaugurates Sunday from a liturgical standpoint. So when does Sunday rest start? Saturday night or Sunday @ 12 AM?

I think the OP’s question was more about wanting to know what the Church officially teaches from a pastoral perspective. Yes, keeping the spirit of things is essential. Yes, doing things from the heart is important. Yes, the Church still has guidelines, and yes, they should still be obeyed.It actually doesn’t matter when it starts. It is the concept that was taught that is important.
You have made basically the same conclusion as me however, do whatever is spiritually helpful. You recommend starting with vespers. I have to admit that I’m not aware of documentation on this question, not that I’m particularly well-versed.
But I think that beginning Sunday worship (and rest) at Vespers is a great idea, whenever possible.
