If pork was forbidden to the Jews, why were there pigs for Jesus to cast demons into and swineherds to witness the event?

If I am not mistaken this was because the swine herders were gentiles not Jewish. I will find a link for you to verify my information.

The NAB’s notes on that scripture might be useful:

9 [26] Gerasenes: other manuscripts read Gadarenes or Gergesenes. See also the note on Matthew 8:28. Opposite Galilee: probably Gentile territory (note the presence in the area of pigs–unclean animals to Jews) and an indication that the person who receives salvation (Luke 8:36) is a Gentile.
