Were any of the apostles well educated theologians or teachers at the start of their calling from Jesus?
 
Not that we know of. Four fishermen, a tax collector, and one guy with the nickname “Terrorist”, but no rabbis that we know of. Presumably they all had some level of interest in religion, and a normal Jewish man’s knowledge of Judaism.

Although now that I think of it, Andrew (the first apostle called) was not only a fisherman, but also previously a follower of John the Baptist.

Nicodemus was a disciple, though, and he was a rabbi of some sort, so there’s one. Although he didn’t really make himself known as a disciple until after Jesus’ death.
 
The only Apostle with any such credentials is St. Paul, who was not one of the original Twelve. As he himself says, he was born out of time, called after the fact by Christ.

I think Our Lord didn’t want the leadership of the very early Church to be learned theologians. Not because such men would be unsuitable, but because he wanted men who would follow him out of simple faith, whom he could teach because they would have open hearts and minds. And when we read about the Sadducees and the Pharisees of his day, we can see why he made the choice he did.
 
Peter it seemed could not write, so he used his disciple and scribe Clement who was later to become Pope St Clement who left us a very important letter, though not in the New Testament, is still part of the canon.

Clement is believed to be the scribe to 1 Peter and author of 2 Peter

The Letter of Clement is not part of the Canon.
The Canon comprises the OT and NT.
