We get facts by processing information. We then get knowledge by forming a consistent minimal set of facts.Facts do not become knowledge until they are processed by a mind (head, if human).

Knowledge is not created in creatures mind. We understand knowledge by combining a minimal consistent set of facts and learn about facts by processing information. I defined knowledge and fact differently.Facts and knowledge are not the same thing. The earth orbits the sun. That is a fact, whether or not it is known. It was a fact long before anybody existed to know it.
What is your definition of knowledge?Knowledge is learned. So in that sense it is created. At one point nobody knew how aerofoils worked. Then people learned, through observation, trial and error, and application. That knowledge, which once didn’t exist, now exists. It was created.

Only the perfect reality (in God) is uncreated. That knowledge must be attained through the Spirit of Truth because only the Truth is without creator, of which Father, Son and Holy Spirit are. The Truth is a person. In it’s expression Father, Son and Holy Spirit are the Truth because of their perfect unity in truth. They don’t become the Truth, they are the Truth. We learn knowledge by observing reality and processing our observations, so called learning. We don’t create anything.It is not the one you propose.
A simple set of facts (indisputable or otherwise) is not knowledge.
Knowledge refers to what a person knows.
And in that case, knowledge is created on an ongoing basis as a person learns.
