How do you know this other than it is claimed?
The most basic answer to this is that we trust Jesus to keep his word. After starting his Church Christ stated that the gates of hell could not destroy it. We as Catholics believe that truth and has proven to be true so far so we have no need to him. Jesus being God does not lie or make false statements. Ergo: proof to the claim.

You do that by picking and committing to your base axioms.

For example, The Winged Victory of Samothrace is the most beautiful piece of sculpture that has ever been created. It’s feminine, yet powerful. Dynamic but also immovable. Human and divine. AND! All these qualities are real things.

Of course the last isn’t objectively true. I accept it as axiom.

Another axiom I hold is that “morality is real”.

Spot on!

Just not right in a way I can objectively prove. We happen to agree on base axioms - which helps us progress toward forming a community with common values.
