It is my understanding that Creationism is concerned with science.
On the other hand, Catholicism is concerned with Salvation. Scripture references include Hebrews 1: 1-3 and 1 Thessalonians 2: 13. Relevant information from the Catechism of the Catholic Church, Second Edition, ISBN: 1-57455-109-4 are paragraphs 101 -141 titled “Christ – The Unique Word of Sacred Scripture.”

It is also my understanding that the word “creationism” is used in many, many different ways by a variety of people. If any of these ways are related to Salvation as taught by the Catholic Church, that is, the realm of faith and morals, then the above references could apply.

I often see Catholic interpretation as the more literal. Fundamentalist protestants will often seem to argue from their conclusions: witness the symbolic reading in John 6 re the eating of Christ’s flesh/blood. Though the literal wording is plain the protestant reading is that this is purely symbolic (I am a protestant but I cannot see the logic in this reasoning), that the reading, to paraphrase Clinton, depends on the meaning of “is.” Quite a laughable conclusion, I think. How many Fundamentalists realize they are reasoning as Clinton did?
