I’m a “freeze in batches and thaw as needed” person. One of my favorites is lentil soup:
8oz lentils
1 14-16oz can chopped tomatoes, liquid included
2 bay leaves
2 cubes bullion, mixed in enough hot water to dissolve
Water, to cover
Most of the time I chop up a link of beef sausage as well, but if you want to make a meat-free version just add a bit of smoke flavor instead.
Put all ingredients in a large pot. Bring to a boil, simmer until appropriate texture reached (takes a few hours). Could probably be done in a crockpot, never tried. Makes a lot of soup, freezes well. Add any seasonings you want - I like tobasco.
