So CAF’ers let’s get a thread going about the dinners we prep.

This thread is meant to be an inspiration for all those looking for something to cook.

Rules:

-One meal per post​

-You can label the meal (gluten free, nut free, vegan, vegetarian, no carb) but do not promote any way of eating over another​

-Try to keep meals financially feasible for families (ie don’t post lobster and steak dinners)​

-pictures are allowed and encouraged​

-Constructive comments and substitutions are welcome. Saying EWWWWWWWW is not​

-Crock pot meals, single pan meals, baking sheet meals are especially encouraged​

-Post recipes. Do not post “family secret” unless you find a similar recipe. In the same way, if you’re cooking XYZ chain food post the copycat recipe.​

I just assembled it, like the Disney movie version. I tweak that recipe though, and put what I had on hand. Eggplant, zucchini red and green peppers onions garlic and my tomato sauce. I cover it with shredded mozzarella later. What are you making xanthippe?

I’m a “freeze in batches and thaw as needed” person. One of my favorites is lentil soup:

8oz lentils
1 14-16oz can chopped tomatoes, liquid included
2 bay leaves
2 cubes bullion, mixed in enough hot water to dissolve
Water, to cover

Most of the time I chop up a link of beef sausage as well, but if you want to make a meat-free version just add a bit of smoke flavor instead.

Put all ingredients in a large pot. Bring to a boil, simmer until appropriate texture reached (takes a few hours). Could probably be done in a crockpot, never tried. Makes a lot of soup, freezes well. Add any seasonings you want - I like tobasco.
 
I just made ham bone soup. A bit of a pot luck, too. Husband doesn’t eat beans and can’t eat dairy so that makes anything with ham a challenge–since ham, beans and cheese seem to be inexorably married.

Ham bone
1 cup meat
5 cups water
2 tsp of bullion
12 red potatoes, cubed small
2 red potatoes run through the handi chopper so they’d add bulk
4 broccoli stems ran through the handi chopper so they’d become invisible 😜
handful of leftover cabbage, shreddded
&
2 slices bacon

I cooked everything on low all day, (sans the bacon) took out the bone and cut up the extra meat that had fallen off. Fried the bacon till crisp. Thickened with a roux of flour–used the grease rather than butter after frying the bacon.

I also made some bread bowls with a basic Italian bread recipe.

I added sour cream to mine, because YUM!
 
A last-minute favorite of mine:

Make pasta of some variety. Mix 2 parts peanut butter to 1 part oil in a pan and heat until the peanut butter is melted, taking care not to burn. Add chopped garlic and season to taste. Pour sauce over pasta, and sprinkle with lightly roasted peanuts. Add any sausage or chopped meat you have, if desired.

(You might get the feeling I’ve done a lot of “cooking while broke.”)
