If when saying the words of absolution, a priest said, “… through the Church may God give you pardon and peace…”, instead of, “… through the ministry of the Church may God give you pardon and peace…”, would it matter?

The key words are “I absolve you.” Don’t fret about minor mistakes. The prieest is human.

No, it wouldn’t matter. Plus the meaning isn’t greatly changed (if at all).
The essential words for absolution are: “Ego te absolvo…”, that is to say: “I absolve you…”.

No, it wouldn’t matter.

The priest could hear your confession, then say nothing but “I absolve you” then run away… And your confession would be 100% valid.

There was just a thread about this about two days ago. You might want to do a search for it.
