I have read that there is a convention of Bible interpretation that if something is mentioned three times, it is generally considered to be true (as opposed to being symbolic or hyperbole).

The obvious example is that of the true presence in Mat / Mark / Luke “This is My body” etc.

Can anyone give me some other examples of this convention?

I have never heard of this. What I was taught is that in the original languages there were no adjectives to modify words, so repetition was used as a way to emphesize something. It had no effect on whether it should be interpreted literally, figuratively, or both.
