About once a week I cook 3 or 4 cups of whole grains. I like to mix them…barley (hulled, not pearled), wheat or rye, whole oats, etc. 1 cup of grain to 1 3/4 cup water, bring to a boil, then turn down and let simmer on low or warm for about an hour.
Then I put them into freezer bags and flatten them and freeze (don’t overfill the bags, you want them about 3/4 inch thick)
When I need them for a meal, I whack a bag on the corner of the stove or counter and pour out whatever grain I need, I microwave it for a minute and it’s ready to go.
Add beans, frozen peas, whatever…I even use them in salads, and instead of pasta. I don’t eat refined grains (flour) except when I go out and whole grain is not an option.
This is super quick, easy and tasty. Can add fruit for a sweet treat, or beans/cheese for a savory breakfast.
I wish I had known about this years ago.
