And so Lent begins in the East (at least for those of us on the new calendar) . . .

Lent can’t start now – I haven’t had my pancake dinner yet!
I had my ice cream sundae yesterday afternoon. Today feels very Lent-y and I’m making lentil soup for dinner.

Yeah, we do miss out on Shrove Tuesday and Martis Gras . . . (but traditionally re consume all the remaining cheese on Cheesefare Sunday, the day before, as dairy is part of the traditional fast).

Besides lentils, what are good sources of vegan protein that are good with potatoes? I can have anything except soy.

Beans, beans and more beans… Most bean varieties contain around 15 grams of protein per cup.

Also high in protein are nuts, particularly almonds, but nuts are expensive and high in fat. Nutritional yeast is a good source, along with chia seeds, quinoa, peas, oats and oatmeal. Some leafy greens have a fair amount of protein as well. Broccoli, spinach, asparagus, artichokes, potatoes, sweet potatoes and Brussels sprouts all contain 4-5 grams per cup.
