This is the Lord’s way of making it possible for us to follow His command to eat His Body and drink His Blood without our deep-seated aversion to cannibalism – which He Himself implanted in us – getting in the way.

Right. St. Thomas says exactly that, that one reason the appearance of bread and wine remain is because it would abhorrent to eat the Body of Christ under its own proper appearance.

Another reason is that it allows for meritorious faith – we believe Christ is present without seeing Him.
