When I pray to Jesus how do I know whether I am trusting in his mercy or whether I am assuming that he will help me.

How do I know the difference?

To assume is to suppose without proof. To trust is to believe in, to hold the opinion as fact.
 
If you are alive to pray, and not in the flames of hell, you are already receiving His mercy.
 
Seems to me that trust is something we put in a person, whereas assumption deals with what we think are facts, and presumption is where we make a prejudicial judgment based on what we think the facts are. So praying to Jesus is trust, whereas if you said, “I don’t need to pray because Jesus said ‘x,y,’” that would be an assumption/presumption.
 
This is good to discuss with Father, or with your spiritual director, if you have one. Except for times of world-wide panic, spending time before Christ in the Blessed Sacrament is the best way of discerning God’s will - which is ultimately merciful even if it does not seem that way at first.

Times of worldwide panic seem to me among the best times for this if we can!
 
Even if the building is closed, you can stand or sit by a door or window, knowing that He is just on the other side.
