What was God’s purpose in designating certain animals clean and unclean?
 
I think first you should ask God. But my guess would be for three reasons based on how I understand the Bible.

Partly the clean animals are better for you.

Partly because of the nature of some of the unclean animals (predators/ carrion eaters).

Mostly because Israel was to be different from their neighbors. Their religion, culture, morality was to be different so that they would be a light on a hill for the gentile nations, a kingdom priest holy to God, and that they would proclaim God’s glory to a watching world.

That’s what I think.
 
It was probably just a matter of hygiene at first.

Many people probably got sick from eating underkcooked pork and so they prohibited eating pork alltogether. They probably forbade eating rats and such because they transmitted diseases. Beef and mutton do not transmit disease to the extent that raw shellfish can. Not eating animals that are found dead from who-knows-what disease vs slaughtered while healthy still seems like a good idea to me.

It is my opinino that dietary laws were part of what set the Israelites apart from other societies and so these were given a religious meaning. I would welcome correction on this. In the end, both Jesus and Peter the Pope void mosaic law dietary restrictions.

As part of the dietary laws there was also the prohibition against eating animals “With life in it” which we understand is its blood. Blood was reserved for temple sacrifice at the altar and drinking it was reseved by God until after the perfect sacrifice of Jesus on the Cross. Jesus even said that eating his flesh and drinking his blood are “Spirit and life.” Only after the crucifixion could the blood of Jesus’ perfect sacrifice be used in the “Temple made without human hands” which is our body.

Once the blood of “A new and better sacrifice” could be consumed, religious dieatary laws were delcared void by God, magesterialy stated by Peter the Pope.

We don’t know that God designated certain animals clean and unclean. The Bible tells us that the people in ancient times understood such as coming from God, for whatever reasons.

As God is Creator, and Creation is good (as Genesis says) I doubt that God created unclean anything.
 
You may wish to read Mark,7, 19 - " (and thus He declared all foods clean)."

Seems to me to pretty much makes the whole question irrelevant!
