Unleavened Bread

Why do we only use unleavened bread for consecration? I am sure it is of an Old Testament tradition, but have not found the Church’s teaching on the subject.
 
The Eastern Catholic Churches (and other Eastern Churches) use leavened bread all the time.

And these churches are traditional, too.
