Was this a valid Mass?

I have tried to do some reading about what exactly contitutes a valid Mass and what does not, but am confused. Might anybody be able to share with me, consisely, when transubstantiation happens? I had previously thought that it happened at the words “the Body and Blood of our Lord Jesus Christ”, but if I have understood, it might actually be at “This is my body, given up for you. This is my blood, it will be shed for you and for all…”
I am particularly concerned because at Mass today, the words were slightly changed. I am translating from French and going on memory, but I believe that the priest prayed something like, “Father, send us your Spirit, so that we may do what your Son has asked us to do… On the night he was betrayed,” etc. I always listen very carefully for the “that they may become for us the Body and Blood of our Lord Jesus Christ” (or “qu’ils devienent pour nous le Corps et le Sang de Jesus Christ, notre Seigneur”) because, as I mentioned above, I have always understood this to be ‘the moment’.
I was worried all throughout the rest of the Mass and could not concentrate well on what may or may not have been the Word made Flesh on my tongue.
So I do realize that these kind of questions have been asked before, but might somebody be kind enough to explain this to me and ideally make reference to the proper documents? I have tried reading through the GIRM, but if I am reading it thoroughly, it does not have each of the valid Eucharistic prayers written out in fullness, but describes how they should be prayed (gestures, etc) while giving the first line as a guide. Can this be found in a missal, or in the little daily readings booklets available?

If the priest said “this is my body” and “this is the cup of my blood”, then it is valid.
 
Ther are two moments that the church believes that this takes place. That is why the format of the Eucaristic Prayers can never be changed.
