I would just do what you can regarding trying to understand Scripture, and would also say to break things down into what you can handle.
Maybe even just read a few verses at a time, and then just think about what you’ve read?
Some people also use Catholic Devotionals when reading the Bible.
They can help you to reinforce what you’ve read, regarding Scripture.
One Devotional that one of my parishes used to have for us was called “Living Faith.”
Sometimes the parish will have these Devotionals available for the parishioners.
A Catholic Devotional is a small booklet, based on the Mass readings of the day, and with a written daily reflection in there.
I personally think that they’re very nice to use, and you can order them as a subscription, like a magazine subscription for yourself if the parish doesn’t have them for you.

There are other devotionals out there, too. This is just one example of one.
As someone else mentioned, you can also try using a media form of the Bible. You can also get it on DVD, where it’s narrated for you and where you can look at it. You might like that.
