Weekend Breakfasts-new ideas wanted!

I am going to second what Brenda V said about fat free sour cream… ewwwwwww… that stuff is nasty! Some foods should NEVER be made fat free!!!

I won’t touch fat-free dairy. Blecch! I’ll mix reduced-fat cheese with regular cheese in recipes to cut the grease, and admit that reduced-fat sour cream and cream cheese taste fine, but give me my real butter, full-fat yogurt, 4% milkfat cottage cheese!

I love egg dishes for breakfast. An easy one is a two-egg omelet stuffed with whatever is in the fridge: sometimes leftover meat and veggies from last night’s dinner (I’ve been known to chop up and saute leftover Brussels sprouts), sometimes fresh onions and peppers that I’ve sauteed. I also LOVE quiche. Since you can buy ready-made pie crusts- a real boon for me, as I’ve never successfully made pie crust from scratch-, it’s super easy to layer in some cheese, then some veggies and/or meat, then an egg custard and bake it.
 
Well, I’ve made a list of everyone’s ideas and will present them to the peanut gallery henceforth and see what they want for this Sunday’s breakfast.
My best suggestion for a weekend breakfast is…
On a Sunday I do believe it has to be called brunch:p Yeah, it’s usually around 10 ish that we eat so it’s not exactly breakfast…

But we always do vigil mass, because it’s more kid friendly at my parish, and the people are used to my autistic son adding his…(name removed by moderator)ut to the mass:blush: It’s nice, because then we have time for the lazy Sunday brunch thing.

kage is it me or do you REALLY love your crock pot:D Every food thread you come up with these great CP recipes. I would have never thought of breakfast in the CP…though I did see that AB episode with the pin oats, looked GOOOOOOD.

I have to share this recipe with you people. It’s on the super yum foods list that my daughter has on the fridge. We haven’t done this one in awhile so I think I’ll make a batch for school this week. They are not so much a muffin, but more like a little mini quiche in texture, without the egg. You can substitute many fillings to you liking.

Sun-dried Tomato Cottage Cheese Muffin Recipe
Code:
1 cup plain cottage cheese (low-fat is fine)
3/4 cup parmesan cheese, freshly grated if u have it
1/4 cup flour 
1 cup almonds, very finely ground
1 teaspoon baking powder
1/4 cup sun-dried tomatoes (in oil), finely chopped
1/4 cup basil, finely chopped
1/4 cup water
4 eggs, lightly beaten
1/2 teaspoon salt
Preheat oven to 400F degrees. Line a muffin pan with medium-sized paper baking cups, you’ll need nine of them.

Put the cottage cheese into a bowl with all but 1/4 cup of the Parmesan cheese, the flour, ground almonds, baking powder, sun-dried tomatoes, basil, water, and eggs, and season with salt, then mix all together.

Spoon the mixture into the muffing cups 3/4 full, scatter with the remaining Parmesan, and bake for 30-35 minutes, or until set, risen, and golden brown. Serve as hot or at room temperature.

you can’t cook supper and you expect us to trust you to cook breakfast?

anybody got the old Bisquik cookbook with the crustless quiches and pies? used to make those all the time, basically mixing a batter of bisquik, milk and eggs, pouring over ingredients
cheese, veggies, bacon, standard quiche
fruit like apples, pie stuff
and the like.
 
So the kids and I always do the Sunday morning big breakfast thing.

In my rotation of breakfasts are a few favorites; pancakes usually with some added fruit like blueberries or blackberries, waffles, overnight pain perdue with orange marmalade, popovers (my fav), scrambled eggs, and we love those chicken breakfast sausages with apple, and sometimes I do bacon but not too often because DS will eat pound after pound of it.

Of course I make coffee for myself, and the kids get chai which they love.

So while those things are yummy, we have them a LOT and I’m looking for some new ideas.

Anyone else do weekend breakfasts and have some ideas or recipes to share?
You can’t beat diner breakfasts, so I watch Diners, Drive-Ins and Dives for inspiration.

I’ve adapted something called The Mess.

Amounts depend on how many people you’re feeding. You need either a big skillet or a flat top. Start with chopped peppers and onion, sauteed, along with some kind of potato, also sauteed in the same pan, and a breakfast meat like ham or bacon, also chopped and sauteed right along with them. Everybody in the pool!

Then when these are almost done you break one egg per person, drop it in and ‘mess’ it around a bit. When the eggs are just short of done, throw on the cheese, turn off the heat, cover the Mess, and let the cheese just melt.

Serve. You don’t need lunch OR dinner. This can probably keep you going all day. 😛
 
Super easy and one of my all time faves:

Skillet pancake

1 c Milk
1 c Flour
4 eggs
Put all the above in a blender to make batter.

Melt 1/4 c. butter in cast iron skillet.

Pour batter into skillet and bake in 425 oven for about 15 minutes. You’ll see the top rise and get nice & golden. It falls after you take it out of the oven, leaving a custardy-cakey cake. Serve with syrup & apple sauce, or let your imagination run wild.

Another really yummy treat is to make boudin sausage & shrimp filled crepes.

I’ve never made popovers. Care to share your recipe? KC’s blueberry scones are awesome too.
 
Brenda YUM! This is right up my alley. Can I make this with some roasted poblanos? I haven’t seen hatch chilies here…there is no interesting food in Milwaukee:rolleyes: .
Girl, you’re not shopping at the right places! You have Trader Joes. Thou shalt not complain. 🙂 Don’t you like Sendicks either? There’s a place on the South Side called Pete’s Fruit Market where they might have hatch chillies at the right time of year. Also, there is the El Rey chain of Mexican groceries. Their food is great. And then the many farmers markets…that’s way more than we get here in no man’s land of SW Florida. We can’t even get local milk, because the cows cannot produce it (I don’t know why, this is what I’m told).

Realy, really good - you don’t need to mix it in a blender either, I used to mix it by hand with a whisk.

Just cuz’ you can’t cook dinner doesn’t mean breakfast isn’t on the menu, you know I do a lot of PB&J for breakfast, I do seem to recall that on your dinner ideas.

Well, only if you have one nearby, how about IHOP? They make pretty darn good breakfast food. Which ties in with the subject at hand, someone else suggested going to a pancake house type restaurant for breakfast ideas :D.

hee hee Tricked DH this morning, by cooking up some veggie sausages…they are sooooo good, and he didn’t know the difference until dd started laughing.😃

Dh was like…‘ok, are these not pork? I thought they tasted strange.’ I was like…yeah, right, you couldn’t tell the difference! lol

He said I’m going to have to start watching you cook from now on. (as I slip tofu in sometimes, where I can lol)

I said it’s good for you, just eat it. Ugh. Sucha baby sometimes when it comes to eating his veggies.😃

But…shanny, they really are good. Morning Star makes them.👍

I…respectfully beg to differ. Even in my vegetarian phases, I’ve never been able to choke those down. I’m a big fan of the Jennie-O turkey breakfast sausage.

oh my gosh, really? I really loved them. They were samples at Publix yesterday, and dd and I tried them…we were like…huh? These are veggie patties? Yummo. I think they’re good for a change. I also like Jennie-O. 👍
