What are these other Eucharistic Prayers in the Ordinary Form?

Well, what exactly are you wanting to know?

There are 10 of them:

Eucharistic Prayers I, II, III, and IV
Eucharistic Prayers for Masses of Reconciliation I and II
Eucharistic Prayers for Masses with Children I, II, and III
Eucharistic Prayer for Various Needs and Occasions (or the Swiss Synod Eucharistic Prayer)

It’s called the Roman Canon because it was the only Eucharistic Prayer there was before the revision of the Missal and since then the others have come into use.
 
There are four “standard” Eucharistic prayers. Eucharistic Prayer II is the shortest one, and is generally used on weekdays. I’ve never heard this said at a Sunday Mass. Eucharistic Prayer III is the most common in the OF. Its a little bit shorter than the Roman Canon, and is pretty much used on Sundays and Holy Days. Eucharistic Prayer IV is very…I guess oblique is the word. I’ve never actually heard it said, although I’ve read it.

The Roman Canon and III are the most commonly used, because they have changeable prefaces. If there is a preface required for the day, then II and IV go out the window.

There are also two Eucharistic Prayers for Reconciliation (I’ve never heard them, and I’m not sure where they are used), three for Masses with children (if I heard them, I would have been a child, so I don’t remember), and four more for specific needs (again, I’ve never heard these).

Basically, the ones you are most likely to hear are I, II, or III.
 
I think the second one was written by Saint Hippolytus, and is the oldest known form of that prayer.

I have heard that the third was written after VII to incorporate some Eastern Church aspects, but I am not sure of that.

Not true; There were (and still are) multiple western “rites”: Mozarabic, Ambrosian, Carthusian, Carmelite, Dominican, Roman… the EP varies in at least one of them.

Only the Mozarabic has a different canon; in fact, it changes daily.

The Ambrosian Rite uses basically the Roman Canon (with some itneresting differences).

The others you mentioned (Carthusian, et al) are mere local variants of the Roman use.
 
I’ve heard Eucharistic Prayers II and III most of the time, with Eucharistic Prayer 1 only a few times, the most recent time being on January 1.
