We assigned themes to each day of the week. That makes meal planning so much easier!

Here are the days with themes and items for this week:

Monday- Mexican- Chicken Tortilla Soup
Tuesday- Pasta- Lasagna
Wednesday- Ethnic- Shrimp Pad Thai
Thursday- Leftovers!
Friday- Fishy- Tilaphia Soft Tacos
Saturday- Comfort Foods/Dinner with ILs- Potato Sausage Bake
Sunday- Leftovers/Dinner with my parents
 
Last night I made broiled shrimp and scallops with garlic and coarse ground pepper and fresh basil on a bed of fresh spinach served with Jasmine rice, brazed orange peppers, and portabella mushrooms sautéed in an a balsamic vinaigrette. A bottle of 2003 Biltmore Merlot accompanied. It was a fine feast.

I did some poking around on a website and here’s the chicken marinade I came up with:

1 cup water
1/3 cup teriyaki sauce
2 tablespoons lime juice
2 teaspoons minced garlic
1 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon tequila
4 skinless, boneless chicken breast halves

Not sure what I’m doing with it once I cook it, but it’s a start. I also found artichokes and asparagus in the fridge. God has provided side dishes! That or I need to clean the produce drawer. I love the PP’s theme menu idea! We may have to steal that one.

Assign themes according to what your kids like, and invite them to help. And don’t forget to schedule a leftover night- cause now you have a way to get rid of them!
 
I’m not actually making this recipe for dinner tonight,but this one is easy and pretty popular at my house:

Put some boneless chicken breasts in a baking dish (I use 9x13).Mix up one can of cream of chicken soup together with 1/4 c. milk and spread that over the chicken.Next,take some veggies (broccoli or mixed veggies are particularly good in this) and put over the chicken.Sprinkle with swiss cheese (or cheddar or mont. jack-whatever you have) then over all,a dry box of Stove Top-type cornbread stuffing mix.You can then add melted marg/butter over the top and bake uncovered at 350 for 50-60 minutes.
This is one of my standard cold-winter casseroles.
I generally just serve it cottage cheese and applesauce or jello/fruit since it has the meat,veggies,and bread already in one dish.
 
Here’s one:

Potato Sausage Bake

One box potatoes au gratin
One package keilbasa (we prefer turkey)
2-3 regular potatoes (to stretch the box)

Wash and pierce the potatoes before placing them in the microwave
Microwave on high for about 5-8 minutes, to begin to soften the taters.
If you like your taters peeled, do it after microwaving the taters. If not, skip that step.
Slice the taters into rounds about 1/2 thick.
Slice the keilbasa into rounds, or half rounds depending on your wee mites.
Layer the taters, keilbasa, and the dehydrated taters in the baking dish. Prepare the sauce according to package directions and pour over the layered mixture. (if you like, you can layer some cheese and peas n carrots in the layers as well) Bake according to package directions.
 
Tonight I’m trying Salsa Chicken:

Chicken Breasts
Sprinkled with taco seasoning
Covered in salsa
Baked
Topped with some cheese
Served with black beans and rice
 
Hay and Straw

16 oz. box of linguini
16 oz. bag of frozen peas (or peas and carrots)
16 oz. fully cooked ham, cut in julienne slices (I like the Hormel presliced, fully cooked ham)
1 cup heavy whipping cream
1 1/2 cups shredded Parmesan cheese

Cook linguini according to package directions. Toss the veggies in during the last 3-5 minutes of cook time (which may need to be extended a little.) Drain. In the meantime, heat the cream and the cheese, stirring until the cheese is melted, then toss with the ham slices and pasta. Sprinkle with more cheese and serve immediately.

If you have a Trader Joe’s near you they have balls of refrigerated pizza dough for 99 cents. That makes homemade pizza easy.

I just looked, and apparently not. If you ever go back and visit PA, there are some there. They are growing though…so maybe in a couple of years. Plus, Florida would be a good place for them to wear their store uniform (which are Hawaiian shirts)

Yeah, I didn’t see any around here in the Tampa Bay area…so I didn’t think so.😦 We’ll have to start a petition campaign.😃
 
Well, I WAS going to make Indian butter chicken with long-grain brown rice. I’ve been craving it, and I went out and bought all the ingredients for it yesterday. And then…

I melted my rice cooker last night! 😦 It was on top of my toaster oven, and I turned the oven on to toast my sandwich, and I guess it was a little too hot. The rice cooker is totally ruined. My friend gave it to me two weeks ago, and I’ve only used it twice. 😦 I can’t cook rice on the stove because my stove doesn’t have a low setting. Now I need to go out and buy a new rice cooker, and find a place to put it. I have only three square feet of counter space, and I have concrete walls so I can’t install a shelf. (sulk.)

Now I guess I’ll put the ingredients for butter chicken in the freezer, and make something else for dinner. Maybe an omelette. Sulk. 😦
 
It was warm enough tonight (read: above freezing) to grill outside, so DH grilled up chicken breasts that we had marinated in rosemary-roasted garlic dressing (in the Whole Foods refrig salad case, I highly recommend it). We had microwave baked potatoes and oven roasted broccoli on the side.

The broccoli is super easy: preheat the oven to 400 F. Cut the broccoli into florets and toss with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for about 15 minutes. It’s so good! 👍

Measure the rice and the water and place it into an oven proof baking dish that has a cover. Place it in the oven at 400 degrees for about an hour. It comes out fabulous and fluffy!

You don’t understand the smallness of my kitchen. There’s no oven, either. Just the toaster oven, which is about three inches tall inside. There ain’t no room for an oven-proof baking dish in there. 😦

I swear, my house is the most badly designed apartment I’ve ever lived in. I’ve got the itty-bittiest little kitchen you’ve ever seen. If I step back from my teeny-tiny scrap of counter, my back touches the wall. There’s an enormous fridge taking up half the space, which I can’t get rid of because it belongs to my employer, and the kitchen can’t be expanded because it would block the entrances to every other room. The counter, such as it is, has cupboards about 18 inches above it, and they are the same depth as the counter so that you can’t reach the back of the counter without hitting your head. And the walls are all concrete so you can’t put a new shelf up or expand your space. Can you tell I don’t like my kitchen? I’m moving in six months or so, and I can’t wait. I don’t know what job I’ll have, and I’m sure to live in a much smaller place, probably one room, but it’s got to be better than this. [/RANT]

Back to the thread topic, I believe I might make some kind of avocado and chicken wrap for dinner. Not sure what I’ll put in it, but I may as well use the chicken I bought.
